Ginataang Pritong Tilapia
Ginataang Pritong Tilapia pairs crisp fried fish with a spicy coconut milk sauce.

Ingredients for Ginataang Pritong Tilapia
- 2 large tilapia, cleaned and scaled
- 2 cups coconut milk
- 6 cloves garlic, crushed
- 3 shallots, finely chopped
- 1 thumb-sized ginger, cut into thin strips
- 3 long green chillies
- 2 bird's eye chillies
- 1 large bunch baby bok choy, trimmed
- Oil, for frying
- Salt, to taste
- Freshly ground black pepper, to taste
- Fish sauce, to taste
How to cook Ginataang Pritong Tilapia
- 1.Cut 2–3 slits on each side of the tilapia and rub generously with salt and black pepper.
- 2.Fry at 180°C over medium heat for 5 minutes per side, until golden and crisp; drain.
- 3.Leave 3 tablespoons oil in the pan and sauté shallots, garlic, and ginger until shallots soften.
- 4.Add coconut milk, bring to a boil, cover, and cook over low-medium heat for 5 minutes. Add fish, cover, and simmer 12 minutes.
- 5.Add both chillies, fish sauce, and black pepper; cook 3 minutes. Add bok choy, cover 1 minute, then adjust seasoning and serve.
