Kusahos
Kusahos is crisp fried, vinegar-soy cured beef traditionally dried before cooking.

Ingredients for Kusahos
- 1 kg beef rump steak, thinly sliced
- 1 cup cane vinegar
- 1/2 cup soy sauce
- 1 whole garlic bulb, crushed
- 1 tablespoon freshly ground black pepper
- Cooking oil, for frying
How to cook Kusahos
- 1.Mix cane vinegar, soy sauce, crushed garlic, and black pepper in a nonreactive bowl.
- 2.Massage the beef with the marinade. Refrigerate uncovered overnight to cure and dry the surface.
- 3.Arrange beef on a rack over a tray and dry in direct sun beneath a mesh cover for one day, repeating if still moist.
- 4.Heat oil in a wok over medium-high heat and fry dried beef until cooked through and crisp at the edges.
- 5.Drain briefly and serve warm with rice.
