Pocherong Tinomas
Pocherong Tinomas combines tender beef with sweet plantain, vegetables, and Mang Tomas sauce.

Ingredients for Pocherong Tinomas
- 1 kg stewing beef or 1 1/2 kg beef short ribs
- 1/2 cup bacon scraps or cubed jamon
- 2 medium sweet potatoes, cubed and pan-fried
- 4 saba bananas, sliced and pan-fried
- 2 bunches bok choy
- 150 g French beans
- 3 tbsp tomato paste
- 1 cup Mang Tomas Sauce
- 1 litre beef stock
- 1 onion, diced
- 6 cloves garlic, minced
- Fish sauce
- Freshly ground black pepper
- Oil
How to cook Pocherong Tinomas
- 1.Season beef with black pepper, then brown it in batches in oil; set aside.
- 2.Sauté garlic and onion in the same pot, add bacon scraps or jamon, and cook for 2 minutes.
- 3.Return beef, add beef stock, and simmer gently for 1 hour.
- 4.Stir in tomato paste and Mang Tomas Sauce; simmer 15 minutes.
- 5.Add French beans, fried sweet potatoes, and fried saba; simmer 5 minutes.
- 6.Season with fish sauce and pepper, add bok choy, turn off heat, cover 5 minutes, and serve with rice.
