Beef Pares

Beef Pares serves tender sweet-savory braised beef with its clear, aromatic beef broth.

Ingredients for Beef Pares

  • 2 lb beef brisket, cubes, or shank
  • 8 to 10 cups water
  • 1 medium yellow onion, quartered
  • 1 tbsp peppercorns
  • 2 tbsp fish sauce
  • Salt, to taste
  • 2 tbsp toasted garlic, plus more for garnish
  • 1/2 cup spring onions, chopped, plus more for garnish
  • 2 tbsp oil
  • 1 medium onion, finely chopped
  • 1 thumb-sized ginger, julienned
  • 4 cloves garlic, finely minced
  • 1/4 cup soy sauce
  • 3 to 4 star anise
  • 1/4 tsp five-spice powder
  • 3 bay leaves
  • 2 to 3 tbsp brown sugar
  • 1/4 tsp ground pepper
  • 1 tbsp cornstarch dissolved in 1/2 cup water

How to cook Beef Pares

  1. 1.Soak beef in water for 10–15 minutes, discard water, and rinse. Boil 8–10 cups fresh water with beef, quartered onion, peppercorns, and fish sauce.
  2. 2.Cover and simmer on low 30–40 minutes until fork-tender, adding water if needed. Remove meat, cube it, and return shank bones to broth if using.
  3. 3.Season broth with salt and add toasted garlic and chopped spring onions; keep hot for serving.
  4. 4.Sauté finely chopped onion, garlic, and ginger in oil over medium heat until tender. Add beef and brown the edges.
  5. 5.Add soy sauce, star anise, five-spice, bay leaves, sugar, pepper, 2 cups broth, and cornstarch slurry. Cover and simmer 15–20 minutes until tender and glossy.
  6. 6.Serve beef with toasted garlic and spring onions, accompanied by the seasoned broth and fried garlic rice.
