- 1 medium boneless bangus
- 2 fresh tomatoes, diced
- 1 small onion, diced
- 5 to 6 pandan leaves
- 1 thumb-size piece ginger, minced
- Salt, to taste
- Ground black pepper, to taste
How to cook Genesee’s Grilled Boneless Bangus in Pandan Leaves
- 1.Wash the boneless bangus and season lightly with salt and ground black pepper.
- 2.Combine tomatoes, onion, and ginger; season the mixture with salt and pepper.
- 3.Stuff the fish with the tomato mixture.
- 4.Wrap pandan leaves around the fish, tucking each end securely to keep the filling enclosed.
- 5.Grill in a nonstick pan for 10 to 15 minutes per side, or bake for 20 minutes, until the fish flakes easily.
- 6.Remove pandan leaves and serve warm.
