Tuna Jaw Sinigang
Tuna jaw simmers in a bright tamarind broth with tender vegetables.

Ingredients for Tuna Jaw Sinigang
- 2 pounds tuna jaw (panga ng tuna)
- 2 cups string beans (sitaw), cut into 2-inch pieces
- 2 eggplants, sliced
- 8 okra, cleaned
- 1 bunch water spinach (kangkong), chopped
- 4 tomatoes, halved
- 1 onion, wedged
- 2 tablespoons fish sauce (patis)
- 44 g sinigang mix
- 8 cups water
- 4 long green chilli peppers (siling pansigang)
How to cook Tuna Jaw Sinigang
- 1.Bring water to a boil; add onion and tomatoes and cook until tender.
- 2.Add tuna jaw and simmer for 15 minutes.
- 3.Stir in sinigang mix, chillies, and eggplant; simmer 3 minutes. Add okra and sitaw and cook 3 minutes.
- 4.Fold in kangkong and fish sauce, turn off heat, cover, and let residual heat wilt the greens. Serve hot.
