Tausug Beef Kulma
Tausug Beef Kulma is a slow-cooked coconut curry enriched with peanut butter, tomato, and lemongrass.

Ingredients for Tausug Beef Kulma
- 1 kg stewing beef, cubed
- 2 heaping tbsp peanut butter
- 1/3 cup tomato paste
- 2 cups coconut milk
- 1/2 cup coconut cream
- 2 1/2 cups beef stock
- 2 tbsp curry powder
- 1 tsp cinnamon
- 1 tsp paprika
- 1 bay leaf
- Juice of 1/2 lemon
- 4 cloves garlic, minced
- 2 large onions, chopped
- 2 bird's-eye chillies, chopped
- 1 bunch lemongrass, pounded
- Salt, to taste
- Freshly ground black pepper, to taste
- Oil, for cooking
How to cook Tausug Beef Kulma
- 1.Mix salt, curry powder, paprika, cinnamon, and lemon juice. Coat beef and marinate for 30 minutes.
- 2.Brown beef in hot oil and set aside. Sauté garlic and onions in the same pot until soft.
- 3.Return beef with bay leaf, beef stock, and coconut milk. Bring to a boil, then simmer gently for 1 hour.
- 4.Add tomato paste, peanut butter, lemongrass, and chillies; simmer over low heat for 45 minutes.
- 5.Stir in coconut cream and cook 15 minutes more, until beef is tender and sauce is rich. Season with salt and pepper.
