Imbaw
Imbaw is a clean, aromatic clam soup flavored simply with ginger, tomatoes, and lemongrass.

Ingredients for Imbaw
- 1 kg imbaw or other large clams, thoroughly cleaned
- 2 ripe tomatoes, halved
- 1 spring onion, sliced
- 2 stalks lemongrass, tied in knots
- 1 onion, chopped
- 1 thumb-sized piece ginger, peeled and julienned
- Sea salt, to taste
- 3 cups water
How to cook Imbaw
- 1.Bring water to a boil in a large pot.
- 2.Add tomatoes, ginger, onion, spring onion, and lemongrass. Cover and simmer for 3 minutes to infuse the broth.
- 3.Add clams gently and season with sea salt. Reduce heat to low.
- 4.Simmer for 1 minute, until clams open. Discard any unopened clams and serve the soup immediately.
