Lengua de Gato are thin Filipino butter cookies baked until crisp with pale centers and lightly golden edges.

Ingredients for Lengua de Gato
1 cup flour, sifted
1/2 cup caster sugar
1/2 teaspoon salt
2 egg whites
115 g butter, cubed and softened
1/2 teaspoon vanilla
How to cook Lengua de Gato
1.Preheat the oven to 180 C and line a baking pan with baking paper.
2.Cream the softened butter in a mixing bowl with an electric mixer for 1 minute, then add the caster sugar gradually and continue mixing for about 2 minutes.
3.Add the egg whites and beat for 2 minutes more. Add the sifted flour gradually and mix for another 2 minutes, then blend in the vanilla and salt for 1 minute.
4.Transfer the batter to a piping bag fitted with a large flat oval tip. Pipe strips about 3 inches long onto the lined pan, leaving space between them.
5.Bake for about 10 minutes, until the edges turn light golden brown while the centers remain pale. Let the cookies cool before serving.
