Pork Tapa with Fried Banana and Salted Egg

Tangy Pork Tapa is served as a hearty breakfast plate with crisp saba and salted egg.

Ingredients for Pork Tapa with Fried Banana and Salted Egg

  • 2 lb pork shoulder, sliced
  • 4 saba bananas, halved lengthwise
  • 4 salted eggs
  • 3/4 cup white vinegar
  • 1/2 tsp salt
  • 1 tsp granulated white sugar
  • 1/4 tsp ground black pepper
  • 4 cloves garlic, crushed and minced
  • 1/4 cup cornstarch
  • 1/2 cup cooking oil
  • 4 cups cooked white rice

How to cook Pork Tapa with Fried Banana and Salted Egg

  1. 1.Mix vinegar, sugar, salt, pepper, and garlic. Coat pork in the mixture and marinate at least 3 hours.
  2. 2.Drain pork and air-dry it on a plate for 1 to 2 hours, covered to protect it.
  3. 3.Heat half the oil over medium heat. Coat saba bananas in cornstarch and fry 1 to 2 minutes per side; drain on paper towels.
  4. 4.Add oil as needed and fry pork until medium brown and cooked through.
  5. 5.Serve pork with rice, salted egg, fried saba, and spicy vinegar dip.
