Atchara
Atchara is a crisp, sweet-sour green papaya pickle that improves after a few days in the refrigerator.

Ingredients for Atchara
- 4 cups fresh green papaya, shredded
- 1 carrot, shredded
- 1 red capsicum, thinly sliced
- 1 thumb-sized ginger, thinly sliced
- 1/2 cup raisins
- 1 cup cane vinegar
- 1 cup water
- 1 cup white sugar
- Salt, as needed
How to cook Atchara
- 1.Toss shredded green papaya with 1/4 cup salt and let stand for 1 hour.
- 2.Rinse the papaya thoroughly in a colander, then wrap it in muslin and squeeze out as much liquid as possible.
- 3.Mix papaya with carrot, capsicum, ginger, and raisins in a bowl or clean containers.
- 4.Bring cane vinegar, water, sugar, and 1 tsp salt to a boil. Simmer 5 minutes without stirring.
- 5.Pour the hot brine over the vegetables, seal tightly, and refrigerate. Marinate for at least 2 days before serving.
