Buridibud
Buridibud is a hearty vegetable-and-prawn soup enriched with bagoong monamon.

Ingredients for Buridibud
- 350 g prawns, shell-on
- 2 large sweet potatoes, sliced
- 1 long bitter gourd, sliced
- 1 large bunch pea shoots
- 12 moringa fruits (drumsticks), peeled and sliced
- 2 Asian eggplants, sliced
- 3 cups chicken stock
- 3 tablespoons bagoong monamon
- 1 onion, sliced
- 4 cloves garlic, minced
- 1 teaspoon minced ginger
- Salt, to taste
- Freshly ground black pepper, to taste
- Oil
How to cook Buridibud
- 1.Heat oil in a pot over medium heat; sauté garlic, ginger, and onion until fragrant.
- 2.Add chicken stock and half the sweet potatoes. Bring to a boil and simmer until very soft.
- 3.Add bitter gourd, remaining sweet potatoes, moringa fruit, and eggplants; simmer 7 minutes.
- 4.Stir in bagoong monamon, prawns, and pea shoots; cook 3 minutes until prawns are opaque.
- 5.Season with salt and black pepper, then serve hot.
