- 1 kilogram beef brisket, cubed
- 1/4 cup brown sugar
- 1/3 cup soy sauce
- 1 whole head garlic, peeled
- 1/2 teaspoon freshly ground black pepper
- 4 cups water
- 3 tablespoons oil
- Fried garlic, for garnish
How to cook Rodic’s-Style Chopped Beef Tapa
- 1.Place beef, brown sugar, soy sauce, garlic, black pepper, and water in a pressure cooker.
- 2.Pressure-cook for 1 1/2 hours, then slowly release pressure and safely open the cooker.
- 3.Transfer beef to a plate, leaving the liquid behind; shred the meat with forks.
- 4.Return shredded beef to the pot and cook over medium heat until the liquid has evaporated.
- 5.Add oil and cook 2 minutes, until some flakes crisp at the edges. Garnish with fried garlic.
