Sinangkutsang Manok
Sinangkutsang Manok is golden pan-browned chicken finished in a gingery annatto sauce.

Ingredients for Sinangkutsang Manok
- 1 kg chicken wings or nibbles
- 1 whole head garlic, crushed
- 1 thumb-sized piece ginger, cut into matchsticks
- 1 large white onion, sliced
- 2 tsp annatto powder, dissolved in 1/4 cup water
- 1 cup water
- Juice of 1/2 lemon
- Freshly ground black pepper
- Salt
- Oil
How to cook Sinangkutsang Manok
- 1.Season chicken generously with salt and rest for 15 minutes.
- 2.Heat oil in a wok over medium-high heat. Brown chicken undisturbed for a few minutes per side, then transfer to a plate.
- 3.Over medium heat, add more oil if needed and sauté garlic, ginger, and onion until soft and fragrant.
- 4.Return chicken to the wok. Add water and annatto mixture, bring to a rapid boil, cover, and cook over high heat for 15 minutes.
- 5.Uncover and toss until the reduced sauce coats the chicken. Season with black pepper, stir in lemon juice, and serve hot with rice.
