Pinoy Barbecue
Sweet-savory Pinoy Barbecue is marinated pork grilled in glossy banana-catsup basting sauce.

Ingredients for Pinoy Barbecue
- 1 kg pork shoulder chops, deboned and excess fat removed
- 1/2 cup soy sauce
- 1/2 cup banana catsup or sweet-style tomato catsup
- 1/4 cup calamansi or lemon juice
- 1 tsp baking soda
- 1 head garlic, minced
- 1 onion, finely chopped
- 1 tsp ground black pepper
- 4 tbsp brown sugar
- 4 tbsp oil
- 2 tbsp soy sauce, for basting
- 2 tbsp banana catsup or sweet-style tomato catsup, for basting
- 1 tbsp oil, for basting
- 1 tbsp sugar, for basting
- Bamboo skewers, soaked in water for at least 6 hours
How to cook Pinoy Barbecue
- 1.Cut pork into roughly 2-by-1-inch pieces. Mix soy sauce, catsup, calamansi juice, baking soda, garlic, onion, pepper, and brown sugar.
- 2.Coat pork in the marinade, cover, and refrigerate for at least 24 hours. Mix in 4 tablespoons oil before skewering.
- 3.Thread 3 pork pieces onto each soaked skewer. Mix the leftover marinade with basting soy sauce, catsup, oil, and sugar.
- 4.Grill over medium heat until lightly charred on one side, then turn and baste.
- 5.Continue turning and basting until browned, lightly charred, and cooked through.
