Beef Goto
Beef Goto is a thick, comforting glutinous-rice porridge enriched with slow-cooked brisket.

Ingredients for Beef Goto
- 1 kg beef brisket, cut into 2 cm cubes
- 2.5 litres water
- 1 large onion, quartered
- 1 thumb-sized ginger, smashed
- 1 tsp whole black peppercorns
- Salt, to taste
- Freshly ground black pepper, to taste
- 2 cups glutinous rice, rinsed
- 3 tbsp ginger, julienned
- 8 cloves garlic, minced
- 1 medium onion, chopped
- Fish sauce, to taste
- Cooking oil
- Fried garlic, for serving
- Chopped spring onions, for serving
- Hard-boiled eggs, halved, for serving
- Lemon or calamansi wedges, for serving
How to cook Beef Goto
- 1.Season beef with salt and pepper; brown in batches over medium-high heat. Sauté quartered onion, smashed ginger, and peppercorns in the same pot.
- 2.Return beef, add water, boil, then simmer gently for 2 hours until very tender. Strain broth, keeping beef and discarding aromatics.
- 3.In a clean pot, sauté garlic until lightly golden; reserve half for topping. Add chopped onion and julienned ginger until soft.
- 4.Stir in rice for 2 minutes, season with fish sauce, then add 10 to 12 cups broth and beef. Simmer 40 minutes, stirring frequently, until creamy.
- 5.Add broth or water as needed. Serve with reserved fried garlic, spring onions, eggs, and lemon or calamansi.
