Chicken Kare Kare
Chicken Kare Kare has a savory peanut sauce, tender chicken, vegetables, and cooked bagoong alamang on the side.

Ingredients for Chicken Kare Kare
- 2 1/2 lbs chicken thighs
- 3/4 cup peanut butter
- 1 bunch bok choy
- 1 Chinese eggplant, sliced
- 10 snake beans, cut into 2-inch pieces
- 1 onion, chopped
- 5 cloves garlic, crushed
- 1 1/2 tsp annatto paste
- 1/4 cup cooked bagoong alamang
- 2 cups chicken broth
- 2 tsp cornstarch, diluted in 1/4 cup water
- 3 tbsp cooking oil
How to cook Chicken Kare Kare
- 1.Heat oil in a pot and sauté onion and garlic until the onion softens.
- 2.Add chicken and cook 1 to 1 1/2 minutes per side, then continue sautéing for 2 minutes.
- 3.Pour in chicken broth and bring to a boil. Stir in annatto paste until fully dissolved.
- 4.Cover and boil over medium heat for 30 to 35 minutes, until chicken is tender.
- 5.Stir in peanut butter and enough cornstarch slurry to thicken the sauce.
- 6.Add eggplant and snake beans; cover and cook 5 minutes. Add bok choy and cook 3 minutes. Serve with bagoong alamang.
