Inihaw na Liempo (Grilled Pork Belly)

Pork belly takes on a smoky, savory-sweet glaze after a calamansi and garlic marinade. Serve with rice and a sharp vinegar dip.

Ingredients for Inihaw na Liempo (Grilled Pork Belly)

  • 800 g pork belly, sliced about 1 cm thick
  • 1/4 cup soy sauce
  • 1/4 cup calamansi juice
  • 5 garlic cloves, minced
  • 2 tbsp brown sugar
  • 1 tsp freshly ground black pepper
  • 1 tbsp neutral oil
  • Vinegar and chopped chili, to serve

How to cook Inihaw na Liempo (Grilled Pork Belly)

  1. 1.Mix the soy sauce, calamansi juice, garlic, sugar, and pepper. Coat the pork belly and refrigerate for at least 30 minutes.
  2. 2.Lift the pork from the marinade and pat off excess liquid. Brush the slices lightly with oil.
  3. 3.Heat a grill or grill pan to medium. Cook the pork for about 5 to 7 minutes per side, turning as needed, until well browned and cooked through.
  4. 4.Rest the pork for 5 minutes, then slice. Serve with rice and vinegar with chili.
