Manuk Kiarehan
Manuk Kiarehan is a fragrant coconut chicken curry with black beans and curry leaves.

Ingredients for Manuk Kiarehan
- 1 kg chicken legs
- 2 cups coconut milk
- 1 cup coconut cream
- 2 medium carrots, chopped
- 3 curry leaves
- 3 tbsp curry powder
- 2 tsp chili powder
- 3 tbsp salted black beans, lightly mashed
- 1 handful coriander, stems finely chopped and leaves separated
- 1 large red onion, chopped
- 6 cloves garlic, minced
- Freshly ground black pepper, to taste
- Fish sauce, to taste
- Oil
How to cook Manuk Kiarehan
- 1.Heat oil in a pot over medium-high heat and brown chicken on all sides. Remove and set aside.
- 2.Sauté garlic and onion for 1 minute. Add curry leaves and coriander stems; sauté 1 minute more.
- 3.Add coconut milk, carrots, and chicken. Bring to a boil, then simmer on low for 30 minutes.
- 4.Stir in curry powder, chili powder, black beans, and coconut cream. Simmer on low for 15 minutes.
- 5.Season with black pepper and fish sauce, then garnish with coriander leaves before serving.
