Pork Tausi
Pork tausi braises browned pork belly in a savory salted-black-bean sauce.

Ingredients for Pork Tausi
- 750 g pork belly, thinly sliced
- 3 tbsp salted black beans
- 2 tbsp dark soy sauce
- 1 cup water
- 1 tbsp white sugar
- 6 red chilies
- 1 thumb-size piece ginger, minced
- 1 onion, finely chopped
- 6 cloves garlic, minced
- Freshly ground black pepper, to taste
- Salt, to taste
- Cooking oil
How to cook Pork Tausi
- 1.Heat oil in a wok and brown pork slices around the edges.
- 2.Push pork aside, then sauté garlic, ginger, onion, and chilies until fragrant; stir together.
- 3.Mash salted black beans with a spoon and combine with dark soy sauce, sugar, and water.
- 4.Pour in the sauce over high heat and bring to a boil while stir-frying.
- 5.Cover and simmer on low for 20 minutes. Raise heat during the last minutes to thicken, then season and serve.
