Oxtail Kare-Kare
Oxtail Kare-Kare is a deeply savory peanut stew served with bagoong alamang.

Ingredients for Oxtail Kare-Kare
- 2 1/2 lbs oxtail
- 1 Knorr Pork Cube
- 2 bunches baby bokchoy or pechay
- 1 Chinese eggplant, sliced
- 10 snake beans (sitaw), cut into 2-inch pieces
- 1 small fresh banana blossom (puso ng saging), sliced
- 3/4 cup annatto water, from 1/2 cup annatto seeds soaked in 3/4 cup water
- 3/4 cup peanut butter
- 1/2 cup ground peanut
- 1/4 cup cornstarch
- 1/2 cup bagoong alamang, for serving
- 1 medium yellow onion, chopped
- 3 garlic cloves, crushed
- 4 to 6 cups water
- 3 tablespoons cooking oil
How to cook Oxtail Kare-Kare
- 1.Heat oil in a pot and sauté garlic and onion until softened. Add oxtail and cook until lightly browned.
- 2.Pour in water, bring to a boil, add Knorr Pork Cube, and cover. Simmer over low-medium heat until tender, about 2 to 2 1/2 hours.
- 3.Stir in peanut butter and ground peanut, then add annatto water and cook for 3 minutes.
- 4.Mix cornstarch with 1/2 cup cold water. Stir into the pot until the sauce thickens.
- 5.Cook banana blossom 3 to 4 minutes, eggplant and sitaw 5 minutes, then bokchoy 2 minutes. Serve with bagoong alamang.
