Masikoy
Masikoy is a chewy coconut rice cake served in a warm pandan coconut sauce.

Ingredients for Masikoy
- 2 cups glutinous rice flour
- 1 cup water
- 1/3 cup coconut strips
- 1/2 cup roasted sesame seeds, ground
- 3 cups coconut milk
- 1 cup brown sugar
- 1 stalk pandan leaves
How to cook Masikoy
- 1.Mix glutinous rice flour, water, coconut strips, and ground sesame seeds into a workable dough.
- 2.Pinch off small portions and flatten each into an oblong disc.
- 3.Combine coconut milk, brown sugar, and pandan leaves in a wok; bring slowly to a boil.
- 4.Gently add the rice cakes and cook until they float. Spoon cakes and sauce into serving bowls.
