Shrimp Laing
Shrimp laing is a coconut-rich taro leaf dish made savory with shrimp paste, pork fat, chilies, ginger, and fresh shrimp.

Ingredients for Shrimp Laing
- 2 oz dried taro leaves
- 10 shrimp, antennae trimmed and deveined
- 4 cups coconut milk
- 3 tablespoons shrimp paste
- 1 onion, minced
- 5 cloves garlic, crushed
- 3 thumbs ginger, julienned
- 6 Thai chili peppers
- 3 ounces pork fat
- Ground white pepper to taste
How to cook Shrimp Laing
- 1.Prepare shrimp by trimming antennae and deveining; set aside.
- 2.Cook pork fat in a pot over medium heat until it renders enough oil.
- 3.Saute onion, garlic, and ginger in the rendered fat until the onion softens.
- 4.Pour in coconut milk and bring to a boil.
- 5.Add chilies, shrimp paste, and dried taro leaves; cover and cook 5 minutes.
- 6.Press leaves under the coconut milk, cover, and simmer 30 minutes, then stir and cook on low-medium 45 to 60 minutes until very soft.
- 7.Season with white pepper, add shrimp, and cook 3 minutes until the shrimp turn opaque.
