Binallay
Binallay is a steamed glutinous rice cake served with palm-sugar coconut sauce and latik.

Ingredients for Binallay
- 2 cups glutinous rice flour
- Water, as needed
- Banana leaves
- Coconut oil
- 1 cup coconut milk
- 1/2 cup coconut cream
- 1 cup palm sugar
- Latik, for topping
How to cook Binallay
- 1.Mix glutinous rice flour with enough water to form a bread-like dough, then knead for 5 minutes.
- 2.Divide dough into ping-pong-size balls and flatten each into a rectangle.
- 3.Brush banana leaves with coconut oil, wrap each dough rectangle securely, and steam for 25 minutes.
- 4.Bring coconut milk and coconut cream to a boil in a saucepan until beginning to thicken.
- 5.Add palm sugar and boil until the sauce is brown and thick.
- 6.Unwrap binallay, place over the sauce, and sprinkle with latik.
