Pork Asado Kapampangan
Pork Asado Kapampangan is tender braised pork in a tomato, liver spread, and cheese sauce.

Ingredients for Pork Asado Kapampangan
- 3 tbsp oil
- 2 large potatoes, peeled and sliced
- 2 lb pork shoulder, cut into 3–4 large chunks
- 2 cloves garlic, minced
- 2 medium onions or 1 large onion, chopped
- 1 cup tomato sauce
- 1/4 cup lemon juice or calamansi juice
- 1/2 cup soy sauce
- 1 bunch dried thyme or oregano
- 10–12 peppercorns
- 2–3 cups water
- 3 oz liver spread
- 1/2 cup grated cheese
How to cook Pork Asado Kapampangan
- 1.Heat 2 tablespoons oil over medium-high heat; fry potato slices until lightly browned and set aside.
- 2.Add remaining oil and sear pork until browned; remove from the pot.
- 3.Sauté garlic and onion over medium heat until aromatic, then add tomato sauce, citrus juice, and soy sauce.
- 4.Return pork with thyme or oregano and peppercorns; turn in the sauce for 1–2 minutes.
- 5.Add water, cover, and simmer on low 45–60 minutes until fork-tender.
- 6.Stir in liver spread, reduce to a thicker sauce, add cheese, and cook 2–3 minutes. Serve warm with rice.
