Lumpiang Togue

Fresh vegetable-and-shrimp Lumpiang Togue is best fried immediately for a crisp shell.

Ingredients for Lumpiang Togue

  • 2 cups bean sprouts
  • 1/4 head cabbage, shredded
  • 1 large carrot, thinly sliced
  • 1 cup green beans, thinly sliced
  • 1/2 cup minced shrimp
  • 2 tablespoons sesame oil
  • 2 tablespoons oyster sauce
  • 2 teaspoons sugar
  • Salt, to taste
  • Lumpia wrappers
  • 1 1/2 cups vinegar
  • 4 red chilies, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon freshly ground black pepper
  • 1 small onion, chopped
  • 3 tablespoons sugar
  • 1/2 teaspoon salt

How to cook Lumpiang Togue

  1. 1.Combine bean sprouts, cabbage, carrot, green beans, shrimp, sesame oil, oyster sauce, sugar, and salt.
  2. 2.Heat enough oil in a wok for deep-frying.
  3. 3.Place 3 tablespoons filling near one wrapper corner; roll, fold in both sides, and seal the final edge with water.
  4. 4.Fry each lumpia immediately until crisp and golden, then drain on paper towels.
  5. 5.Mix vinegar, red chilies, garlic, pepper, onion, sugar, and salt for the dip.
  6. 6.Serve the hot Lumpiang Togue with the vinegar dip.
