Crispy Tahong
Crispy Tahong turns steamed mussels into a quick, garlicky, lightly spicy fried snack.

Ingredients for Crispy Tahong
- 1 kilogram large green-lipped mussels
- 1 cup flour
- 1/2 cup cornstarch
- 1/4 teaspoon cayenne pepper
- 6 cloves garlic, minced
- Salt, to taste
- Freshly ground black pepper, to taste
- Oil, for deep-frying
How to cook Crispy Tahong
- 1.Place mussels and 1/4 cup water in a covered pot; cook until shells open, then keep covered.
- 2.Combine flour, cornstarch, cayenne, salt, and black pepper in a bowl.
- 3.Remove mussel meat from shells and toss with garlic. Dredge each piece in the flour mixture.
- 4.Heat oil in a wok over medium-high heat. Deep-fry mussels for 2 minutes until golden brown.
- 5.Drain well and serve immediately.
