Kimchi Adobo Fried Rice

Ingredients for Kimchi Adobo Fried Rice
- 1 cup kimchi, chopped
- 1 fried egg, for topping
- 4 cups day-old cooked white rice
- 3 tbsp kimchi juice
- 1 tbsp gochujang
- 3/4 cup pork adobo, chopped
- 1/4 cup cooked bacon bits
- 2 tsp toasted sesame oil
- 2 tsp toasted sesame seeds
- 1/4 cup chicharon, crushed
- 2 tbsp nori strips
- 2 tbsp green onion, chopped
- 2 1/2 tbsp butter
- 2 tbsp garlic-infused oil
How to cook Kimchi Adobo Fried Rice
- 1.Melt butter in a wok over medium heat and add garlic-infused oil.
- 2.When bubbling settles, add pork adobo and cook until the edges are lightly crisp.
- 3.Add kimchi and gochujang; cook 2 minutes. Add rice and stir-fry 3 minutes.
- 4.Add kimchi juice, sesame oil, and sesame seeds; cook 2 minutes.
- 5.Stir in bacon bits, chicharon, nori, and green onion for 1 minute. Plate and top with the fried egg.
