Hamonadong Baboy

Hamonadong baboy is a sweet-savory pork hock dish slowly braised in pineapple juice, soy sauce, brown sugar, and pineapple slices.

Ingredients for Hamonadong Baboy

  • 4 lbs pork ham hock
  • 1 Knorr Pork Cube
  • 2 cups pineapple juice
  • 1/2 cup soy sauce
  • 6 pineapple slices
  • 6 tablespoons brown sugar
  • 3 to 5 cups water
  • 1 onion, minced
  • 4 cloves garlic, minced
  • 4 tablespoons cooking oil
  • Ground black pepper, to taste

How to cook Hamonadong Baboy

  1. 1.Combine the pineapple juice and soy sauce, then place the pork ham hock in a large resealable bag and pour in the marinade. Seal well and refrigerate overnight.
  2. 2.Heat the cooking oil in a large pan or pot over medium heat. Saute the onion and garlic until the onion softens and the garlic begins to turn golden.
  3. 3.Add the marinated pork, reserving the marinade. Sear for 1 minute on one side, then turn and sear the other side for another minute.
  4. 4.Pour in the reserved marinade and add enough water, 3 to 5 cups, to braise the pork. Bring to a boil.
  5. 5.Add the Knorr Pork Cube and stir to dissolve. Cover and cook over low to medium heat for 1 hour.
  6. 6.Turn the ham hock over, cover again, and continue cooking for another hour, until the meat is tender.
  7. 7.Add the brown sugar and pineapple slices, then cover and simmer for 15 minutes more.
  8. 8.Season with ground black pepper and continue cooking uncovered as needed until the sauce reduces by about half and coats the pork. Serve warm.
