Pinakbet Manyaman
This rich Pinakbet Manyaman balances pork, shrimp, and garden vegetables in a savory bagoong sauce.

Ingredients for Pinakbet Manyaman
- Olive oil
- 1 red onion, finely chopped
- 1/2 head garlic, minced
- 150 g pork belly, cubed
- 4 tomatoes, diced
- 1/4 squash or buttercup, roughly 1-inch pieces
- 300 g okra, 2-inch pieces
- 1 large bitter melon, sliced
- 2 small Asian eggplants, 2-inch pieces
- 150 g shrimp, shelled and deveined
- 2 tablespoons bagoong alamang
- 1/2 cup 7-Up or Sprite
- 1/2 cup beer
- 1 tablespoon annatto powder dissolved in 1/4 cup hot water
- Fish sauce
- Freshly ground black pepper
How to cook Pinakbet Manyaman
- 1.Sauté onion and garlic in olive oil over medium heat until fragrant; add pork and brown evenly.
- 2.Add tomatoes and cook until soft and saucy.
- 3.Add squash and okra; pan-fry 2 minutes, cover, and cook on low for 5 minutes.
- 4.Add bitter melon and eggplant; pan-fry 2 minutes.
- 5.Add shrimp, bagoong alamang, beer, soda, and dissolved annatto; cover and simmer over medium heat 5–8 minutes, until vegetables are tender.
- 6.Season with black pepper and fish sauce to taste, then serve.
