Sinigang na panga ng tuna has a savory broth, fresh vegetables, and a sourness that pairs perfectly with hot rice.

Ingredients for Sinigang na Panga ng Tuna (Tuna jaw cooked in sour broth)
- 2 lbs tuna jaw / panga ng tuna
- 2 cups sitaw, cut into 2-inch lengths
- 2 eggplants, sliced
- 8 okra, cleaned
- 1 bunch kangkong, chopped
- 4 tomatoes, halved
- 1 onion, wedged
- 2 tbsp fish sauce / patis
- 44 g sinigang mix
- 8 cups water
- 4 long green chili peppers / siling pansigang
How to cook Sinigang na Panga ng Tuna (Tuna jaw cooked in sour broth)
- 1.Bring 8 cups water to a boil over high heat in a large pot.
- 2.Add the onion and tomatoes. Boil until the tomatoes soften and begin flavoring the broth.
- 3.Add the tuna jaw, reduce to a steady simmer, and cook for 15 minutes.
- 4.Stir in the sinigang mix, siling pansigang, and eggplant, then simmer for 3 minutes.
- 5.Add the okra and sitaw and cook for another 3 minutes, until the vegetables are bright and slightly tender.
- 6.Add the kangkong and season with patis. Turn off the heat, cover the pot, and let the residual heat cook the kangkong.
- 7.Transfer to a serving bowl and serve hot.
