Gokong Halo
Gokong Halo is a deeply simmered pork and chicken soup scented with ginger and sibut herbs.

Ingredients for Gokong Halo
- 1 kg pork hock or leg, chopped into chunks
- 500 g chicken wings or thighs
- 1 small sea cucumber, soaked and sliced, optional
- 8 cups water or light bone broth
- 1 medium daikon (labanos), peeled and sliced
- 1 small onion, quartered
- 4 cloves garlic, crushed
- 3 slices fresh ginger
- 1 sibut herbal pack
- Salt, to taste
- White pepper, to taste
- Spring onions, chopped, for garnish
How to cook Gokong Halo
- 1.Boil pork and chicken for 5 minutes to remove impurities; drain and rinse well.
- 2.Place pork, onion, garlic, ginger, and water or broth in a clean large pot; bring to a boil.
- 3.Add daikon, sibut pack, and optional sea cucumber. Reduce to a gentle, uncovered simmer.
- 4.Simmer about 2 hours, skimming as needed, until broth is lightly reduced and golden brown.
- 5.Add chicken and simmer 30 minutes more, until pork is tender and chicken is cooked through.
- 6.Season with salt and white pepper, discard sibut, garnish with spring onions, and serve hot.
