Chopsuey Stir Fry
Chopsuey Stir Fry keeps shrimp and colorful vegetables crisp in a lightly thickened sauce.

Ingredients for Chopsuey Stir Fry
- 12 jumbo shrimp, peeled and deveined
- 15 snow peas
- 15 oz baby corn
- 1 small red bell pepper, cut into small rectangles
- 1 green bell pepper, cut into small rectangles
- 2 cups cabbage, chopped
- 1 1/2 cups cauliflower florets
- 1 cup broccoli florets, optional
- 1 medium yellow onion, sliced
- 3/4 cup chicken broth
- 2 teaspoons cornstarch
- 3 tablespoons cooking oil
- Salt and ground black pepper, to taste
How to cook Chopsuey Stir Fry
- 1.Heat oil in a wok over high heat. Fry shrimp 30 seconds per side; remove.
- 2.Sauté onion in the remaining oil until beginning to soften.
- 3.Add bell peppers, cauliflower, broccoli, snow peas, baby corn, and cabbage; stir-fry 3 to 5 minutes.
- 4.Return shrimp, season with salt and pepper, and stir-fry 1 minute.
- 5.Mix broth and cornstarch, add to wok, and toss 1 to 2 minutes until slightly thickened.
