Masarsang Menudo is a rich tomato-based pork stew with liver, hotdog, vegetables, peas, and cheese for a hearty Filipino ulam.

Ingredients for Masarsang Menudo
1 1/2 lbs pork, sliced
1 Knorr Pork Cube
1/2 lb pork liver, sliced
4 hotdogs, sliced
2 potatoes, cubed
2 carrots, cubed
1 bell pepper, sliced
3/4 cup green peas
1 onion, chopped and divided
4 cloves garlic, chopped and divided
8 ounces tomato sauce
3 tablespoons soy sauce
3 laurel leaves
2 cups water
1/2 cup grated cheese
1 teaspoon sugar, optional
4 tablespoons cooking oil
Salt, to taste
Ground black pepper, to taste
How to cook Masarsang Menudo
1.Heat the cooking oil in a pot over medium heat. Saute half of the onion and half of the garlic until the onion softens, then add the pork liver and cook for about 1 1/2 minutes while stirring. Remove the liver mixture and set aside.
2.In the same pot with the remaining oil, saute the rest of the garlic and onion until fragrant, then add the pork and cook until the outside turns light brown.
3.Pour in the soy sauce and tomato sauce and stir to coat the pork. Add the Knorr Pork Cube and water, then bring the mixture to a boil.
4.Add the laurel leaves, cover the pot, lower the heat, and simmer for 30 minutes, or until the pork is starting to become tender.
5.Return the cooked liver mixture to the pot, then add the hotdogs, potatoes, and carrots. Stir and cook for 10 minutes, until the vegetables are nearly tender.
6.Add the bell pepper and green peas and cook for 5 minutes more.
7.Season with salt, ground black pepper, and sugar if using, then stir in the grated cheese until it melts into the sauce. Serve warm with rice.
