Pasulbot
Pasulbot is a comforting coconut-milk dessert of soft glutinous rice cakes in caramel sauce.

Ingredients for Pasulbot
- 2 cups glutinous rice flour
- 1 cup water, plus more as needed
- 3 cups coconut milk
- 1/4 cup brown sugar, or to taste
How to cook Pasulbot
- 1.Knead glutinous rice flour with 1 cup water into a smooth dough, adding water or flour as needed. Set aside.
- 2.Melt brown sugar in a pot over medium heat until dark brown and caramelized.
- 3.Slowly stir in coconut milk and bring the caramel mixture to a gentle boil.
- 4.Shape dough into small balls and flatten them slightly.
- 5.Add the rice cakes and simmer over low heat for about 10 minutes, stirring occasionally, until cooked and the coconut sauce thickens.
- 6.Cool slightly in a serving bowl before serving.
