Sardines with White Beans and Lemon
A bright, brothy canned-fish meal that comes together quickly with pantry staples.

Ingredients for Sardines with White Beans and Lemon
- 1 can (425 g) mackerel in tomato sauce
- 1 can (400 g) cannellini beans, drained and rinsed
- Juice of 1 lemon
- ½–1 cup water
- 4 cloves garlic, sliced or minced
- 1–2 shallots, thinly sliced
- 1 lemon, thinly sliced
- 2 tablespoons olive oil
- Salt and ground black pepper, to taste
- Chopped fresh parsley, optional
How to cook Sardines with White Beans and Lemon
- 1.Heat the olive oil in a pan over medium heat. Cook garlic, shallots, and lemon slices slowly until softened and lightly caramelized.
- 2.Add the mackerel with its tomato sauce, breaking it gently into large pieces; simmer for 2–3 minutes.
- 3.Stir in cannellini beans and water. Simmer about 5 minutes, adding enough water for a light broth.
- 4.Stir in lemon juice, then season with salt and pepper. Serve hot with parsley, rice, or crusty bread.
