Pamplina
Pamplina is a comforting pork leg and white bean stew enriched with chorizo and vegetables.

Ingredients for Pamplina
- 1.5 kg pork leg (pata), cut into sections
- 300 g white beans, soaked overnight
- 3–4 chorizo, sliced
- 3 potatoes, cubed
- 1 small cabbage, cut into strips
- 2 bay leaves
- 2 white onions, chopped
- 1 whole garlic bulb, minced
- 2 tomatoes, sliced
- Fish sauce, to taste
- Freshly ground black pepper, to taste
- Olive oil
How to cook Pamplina
- 1.Boil pork leg in water for 10 minutes. Drain and rinse well.
- 2.Heat olive oil in a clean pot. Sauté garlic and onions, then brown pork lightly on all sides.
- 3.Add tomatoes and cook 2 minutes. Add soaked white beans and bay leaves, cover with water, and bring to a boil.
- 4.Simmer gently over low heat for 1 hour. Meanwhile, pan-fry chorizo in a little olive oil until fragrant.
- 5.Add chorizo and its oil, potatoes, fish sauce, and pepper. Simmer 40 minutes until pork, beans, and potatoes are tender.
- 6.Add cabbage and simmer 5 minutes. Serve hot.
