Pancit Lusay
Pancit Lusay is a savory Laoag noodle dish with longganisa, bagoong alamang, and egg.

Ingredients for Pancit Lusay
- 6 Laoag or Vigan longganisa, roughly sliced
- 500 g thin fresh yellow noodles (miki or lusay)
- 3 tbsp bagoong alamang
- 2 stalks spring onions
- 4 eggs, lightly beaten
- 4 cloves garlic, minced
- 1 shallot, minced
- Oil
How to cook Pancit Lusay
- 1.Briefly blanch fresh noodles in boiling water, drain well, and set aside.
- 2.Heat oil in a wok and cook longganisa while gently breaking it up. When browned, push it to one side.
- 3.Add shallot and garlic; sauté for 30 seconds. Add bagoong alamang and cook until fragrant.
- 4.Add noodles and spring onions. Stir-fry for 1 minute, distributing the longganisa and bagoong evenly.
- 5.Make a well, add beaten eggs, and let them set. Break up the egg, stir-fry for 1 minute, and serve.
