Ingredients for Crispy Liempo Sinigang Rice
1 1/2 pounds pork belly, sliced
1/2 cup cornstarch
3 tablespoons fish sauce
3/4 cup cooking oil
22 g Knorr Sinigang sa Sampaloc Original Mix
1 1/2 cups rice
8 long green beans, chopped
1 onion, diced
1 long green pepper, sliced
3 cups water
Ground black pepper, to taste
1/2 teaspoon paprika
3 tablespoons cooking oil
1 tomato, sliced
6 okra
1 Chinese eggplant, sliced
1 1/2 cups spinach
1 cup cake flour, plus more for dredging
1 egg yolk
1 cup cold water
1/4 cup ice cubes
2 cups cooking oil
How to cook Crispy Liempo Sinigang Rice
1.Boil pork in 3 cups water, covered, over low-medium heat for 30 minutes. Add sinigang mix and boil 15 minutes; remove and cool pork.
2.Wash rice, then cook it in strained sinigang broth until tender. Marinate pork in fish sauce 15 minutes, coat with cornstarch, and fry until golden and crisp.
3.Sauté onion 30 seconds in 3 tablespoons oil; cook beans 1 1/2 minutes. Add green pepper and cooked rice, stir-fry 1 to 2 minutes, then season with pepper and paprika.
4.Heat 2 cups oil to 360°F. Mix yolk, cold water, ice, and cake flour briefly until lumpy; flour and batter vegetables, frying 2 to 3 minutes, or spinach under 1 minute. Plate rice, pork, and tempura.
