Beef Sinigang sa Kamias (Sinigang na Baka)
Beef Sinigang sa Kamias is a deeply savory beef soup with the sharp fruitiness of kamias.

Ingredients for Beef Sinigang sa Kamias (Sinigang na Baka)
- 2 lb beef chuck, cubed
- 2 medium tomatoes, wedged
- 1 medium yellow onion, wedged
- 10–12 fresh or dried kamias (bilimbi)
- 7–10 okra
- 4 Indian eggplants, halved
- 12 string beans, cut into 2-inch pieces
- 2–3 cups spinach or kangkong
- 2–3 tablespoons fish sauce
- 4–5 gabi (taro roots), peeled
- 9 cups water, divided
- 2 cups beef broth
How to cook Beef Sinigang sa Kamias (Sinigang na Baka)
- 1.Bring 5 cups water and beef broth to a boil. Add tomatoes, onion, and kamias; cook for 5–8 minutes.
- 2.Add beef and simmer over low-medium heat for 45 minutes.
- 3.Add gabi and simmer for 45 minutes more, until beef is tender.
- 4.Bring remaining 4 cups water to a boil. Blanch okra, eggplant, and beans for 3 minutes; blanch spinach for 45 seconds, then drain.
- 5.Season the beef broth with fish sauce, adding water if needed.
- 6.Divide beef, gabi, and broth among bowls, top with blanched vegetables, and serve warm.
