Hopia Mongo
Hopia Mongo is flaky pastry wrapped around a sweet, thick adzuki bean filling.

Ingredients for Hopia Mongo
- 2 rolls ready-made flaky pastry
- 1 1/2 cups red adzuki beans
- 1 1/4 cups sugar
- 1/2 cup flour
- 1/2 cup butter
- 1 egg, beaten
How to cook Hopia Mongo
- 1.Cover beans with water by about 2 inches, boil until soft, adding water as needed, then mash.
- 2.Cook over low heat with sugar and butter until dissolved; stir in flour until a very thick paste forms, then cool.
- 3.Thaw one pastry roll, halve it, wrap each half around half the filling, and chill the two filled rolls for 1 hour.
- 4.Thaw remaining pastry, cut rounds, slice filled rolls into 1-inch pieces, and enclose each slice between pastry rounds, sealing edges.
- 5.Brush with egg and bake in a greased pan at 200°C for 8 minutes per side. Cool before serving.
