Solita
Solita turns lollipop-cut pork chops into a crisp, savory fried centerpiece.

Ingredients for Solita
- 6 bone-in pork shoulder chops
- 1/4 cup pork or chicken stock
- Oil, for deep-frying
- 1 teaspoon freshly ground black pepper
- 3 bay leaves
- 1 whole garlic, minced
- Juice of 1 lemon
- 3 tablespoons soy sauce
- 1/2 teaspoon salt
- 1 cup flour
- 3/4 cup water
- 1 egg
How to cook Solita
- 1.Cut each chop halfway from the bone and push the meat to one end, forming a lollipop shape.
- 2.Mix pepper, bay leaves, garlic, lemon juice, soy sauce, and salt. Massage over pork and marinate for 30 minutes.
- 3.Place pork and marinade in a covered pan with stock. Steam over medium heat, reduce to low, and cook 25 minutes until fully cooked.
- 4.Uncover and cook over high heat until remaining liquid is absorbed; cool the pork. Whisk flour, water, and egg into a lump-free batter.
- 5.Heat deep-frying oil to 180°C. Coat pork in batter, fry about 5 minutes until crisp, and drain well.
