Afripaya
Afripaya is a tomato-rich beef rib stew brightened with young papaya and capsicum.

Ingredients for Afripaya
- 1 kg water buffalo or beef ribs, cut into sections
- 500 g young papaya, cubed
- 1 large carrot, cubed
- 1 large red capsicum, cubed
- 400 g tomatoes, chopped
- 2½ cups beef stock
- 3 tbsp tomato paste
- 3 bay leaves
- 1 tsp dried sweet basil
- 6 cloves garlic, minced
- 1 large onion, chopped
- Oil
- Fish sauce or sea salt
- Freshly ground black pepper
How to cook Afripaya
- 1.Heat oil in a pot and sauté garlic and onion until fragrant and softened.
- 2.Add ribs and brown them on every side.
- 3.Stir in tomatoes, stock, bay leaves, and basil; cover and simmer for 1 hour 15 minutes.
- 4.Add carrot and simmer 10 minutes, then add papaya and tomato paste; simmer 15 minutes.
- 5.Add capsicum, season with fish sauce or salt and pepper, and cook just until heated through.
