Sinabawang Tilapia
Sinabawang Tilapia is a bright, gingery fish soup with calamansi and sweet potato leaves.

Ingredients for Sinabawang Tilapia
- 1 kg tilapia, scaled, gutted, and cut into sections
- 6 calamansi, juiced
- 2 large tomatoes, sliced
- 1 medium onion, chopped
- 4 garlic cloves, minced
- 4 whole green chilies
- 1 thumb-sized ginger, thinly sliced
- 1 bunch sweet potato leaves
- Fish sauce, to taste
- Freshly ground black pepper, to taste
- 4 cups water
- Oil, as needed
How to cook Sinabawang Tilapia
- 1.Rub tilapia sections with salt and set aside.
- 2.Heat oil in a pot; sauté ginger, onion, garlic, and tomatoes for several minutes, gently crushing the tomatoes.
- 3.Add water and black pepper, cover, and bring to a boil.
- 4.Add green chilies and gently submerge tilapia. Cover and simmer 8 minutes, until the fish is opaque and flakes easily.
- 5.Stir in calamansi juice and fish sauce. Add sweet potato leaves and cook 2 minutes before serving hot.
