Spabok
Spabok is a seafood spaghetti dish coated in a vivid crab-fat and annatto sauce with crunchy toppings.

Ingredients for Spabok
- Spaghetti noodles
- Water, divided
- 150 g crab meat
- 150 g crab fat
- 1/2 cup flaked smoked fish
- 3 tbsp annatto powder
- Fish sauce, to taste
- 3 tbsp cornstarch
- 4 cloves garlic, minced
- 1 red onion, minced
- Oil
- 300 g large shrimp, shell-on
- Crushed pork crackling (chicharon)
- Chopped spring onions
- Hard-boiled eggs, sliced
- Fried garlic
- Lemon, sliced
How to cook Spabok
- 1.Cook spaghetti in boiling water according to package directions; drain and set aside.
- 2.Boil shrimp in 3 cups water until cooked. Reserve liquid, shell shrimp, and crush shells to extract flavor through a fine sieve.
- 3.Blend crab meat, crab fat, shrimp broth, annatto powder, and fish sauce until smooth.
- 4.Sauté garlic and onion in oil. Add crab mixture and smoked fish, then bring to a boil.
- 5.Stir cornstarch with a little water, add it, and simmer until thick; loosen with water if necessary.
- 6.Spoon sauce over spaghetti and garnish with shrimp, chicharon, spring onions, egg, fried garlic, and lemon.
