Ingredients for Adobong Hipon sa Gata (Shrimp Adobo in Coconut Milk)
- 1 lb shrimp, shell-on and head-on, cleaned
- 5 to 6 cloves garlic, crushed
- 4 to 5 dried bay leaves
- 1 cup coconut milk
- 1 tsp whole peppercorns
- 3 tbsp soy sauce
- 2 tbsp white or cane vinegar
- 1/2 cup water
- Salt, to taste
- 3 tbsp cooking oil
How to cook Adobong Hipon sa Gata (Shrimp Adobo in Coconut Milk)
- 1.Heat oil in a pan over medium heat. Add garlic and peppercorns, cooking until garlic is medium brown.
- 2.Add shrimp and cook for about 3 minutes, until orangey.
- 3.Add soy sauce and water, stir, bring to a boil, and cook for 2 minutes.
- 4.Add bay leaves and vinegar. Cover, bring to a boil, and cook for 2 to 3 minutes.
- 5.Add coconut milk, bring to a boil, and cook for 2 minutes. Season with salt, then remove shrimp to a serving bowl.
- 6.Simmer the remaining sauce until thick, pour it over shrimp, and serve.
