Pork Ribs Caldereta is a hearty tomato-liver stew with tender ribs and colorful vegetables.

Ingredients for Pork Ribs Caldereta
- 2 lb pork ribs
- 8 oz tomato sauce
- 3 tablespoons soy sauce
- 1 potato, diced
- 1 carrot, sliced
- 2 bell peppers, sliced
- 3/4 cup frozen green peas
- 5 tablespoons liver spread
- 1 onion, chopped
- 4 cloves garlic, crushed
- 2 Thai chili peppers, chopped
- 2 cups beef broth
- 3 tablespoons cooking oil
- salt and ground black pepper, to taste
How to cook Pork Ribs Caldereta
- 1.Marinate pork ribs in soy sauce for 5 minutes.
- 2.Heat oil in a wok; sauté onion and garlic until softened, then brown the ribs lightly.
- 3.Add tomato sauce and beef broth, bring to a boil, cover, and cook for about 1 hour until tender.
- 4.Stir in liver spread and Thai chili. Add carrot, potato, and water if needed; cover and cook 5 minutes.
- 5.Add bell peppers and peas, cook 3 minutes, season with salt and pepper, and serve with warm rice.
