Begucan Babi
Begucan Babi is tender pork belly simmered in a sweet-savory bagoong alamang sauce.

Ingredients for Begucan Babi
- 1 kg pork belly, cubed
- ¾ cup raw bagoong alamang
- ¼ cup white vinegar
- 4 large tomatoes, chopped
- ½ cup sugar
- 1 tbsp annatto powder
- 1 cup water
- 6 cloves garlic, minced
- 1 red onion, finely chopped
- 4 green finger chillies
- Freshly ground black pepper, to taste
- ½ cup pork lard
How to cook Begucan Babi
- 1.Rinse bagoong alamang in a sieve under running water; drain and set aside.
- 2.Melt pork lard in a pot and brown pork on all sides. Remove pork.
- 3.Sauté garlic and onion until soft, then cook tomatoes and annatto until tomatoes break down.
- 4.Return pork; add vinegar, bagoong, and water. Simmer on low 45 minutes, adding water if necessary, until pork is tender.
- 5.Stir in sugar and finger chillies until sauce reduces, then season with black pepper.
