Inihaw na Panga ng Tuna (Grilled Tuna Jaw)
Inihaw na Panga ng Tuna is smoky grilled tuna jaw with a sweet, spicy soy glaze.

Ingredients for Inihaw na Panga ng Tuna (Grilled Tuna Jaw)
- 3 lb tuna jaw, rinsed
- 1 cup soy sauce, for marinade
- 5 garlic cloves, crushed and minced
- 9 red chillies
- 1/4 cup brown sugar
- 2 limes or 4 calamansi
- 1/4 teaspoon ground black pepper
- 1/2 cup soy sauce, for basting
- 2 tablespoons white sugar
How to cook Inihaw na Panga ng Tuna (Grilled Tuna Jaw)
- 1.Combine marinade soy sauce, lime or calamansi juice, pepper, chillies, garlic, and brown sugar; stir until sugar dissolves.
- 2.Place tuna jaw in a sealed bag with the marinade. Refrigerate overnight, about 3 hours according to the total preparation time.
- 3.Mix basting soy sauce and white sugar. Heat a grill and arrange the tuna jaw on the grate.
- 4.Baste and grill the first side 3–5 minutes. Turn, baste the top and sides, and grill 5 minutes.
- 5.Turn again and grill 5–7 minutes; flip back and grill 5 minutes more, until opaque and cooked through. Serve with soy-citrus-chilli dip.
