Tinapa Spaghetti
Tinapa Spaghetti gives tomato pasta a smoky Filipino twist with salted duck eggs and chicharon.

Ingredients for Tinapa Spaghetti
- 500 g dried spaghetti, cooked according to packet directions
- 3 large tinapa or an equivalent amount smoked fish, flaked
- 1 kg Roma tomatoes, chopped
- 1 white onion, finely chopped
- 1 tablespoon cane vinegar
- 4 cloves garlic, minced
- 1 tablespoon rubbed basil
- 1 tablespoon dried oregano
- Olive oil
- Fish sauce, to taste
- Freshly ground black pepper, to taste
- 2 cups chicharon, coarsely crumbled
- 6 salted duck eggs, sliced
- Chopped parsley
How to cook Tinapa Spaghetti
- 1.Sauté garlic and onion in olive oil until the onion softens.
- 2.Add tomatoes, oregano, basil, and cane vinegar; cook, stirring, until tomatoes break down.
- 3.Stir in flaked tinapa and simmer 20 minutes.
- 4.Season with fish sauce and black pepper; simmer over low heat 10 minutes.
- 5.Top cooked spaghetti with sauce, chicharon, salted duck eggs, and parsley.
